Vegan Snack Box (Recipe)

This easy vegan snack box is perfect for casual gatherings or just as part of your weekly meal prep. Grea to have on hand anytime!


  • 12 mini bell peppers cut in half, seeds scooped out
  • 1/2 cup hummus
  • 1/2 pint blueberries washed and air dried
  • 2 cups strawberries washed and air dried
  • 2 cups quinoa black bean tortilla chips

Trail mix

  • 1/4 cup almonds
  • 1/4 cup vegan chocolate chunks
  • 2 tablespoons sunflower seeds
  • 2 tablespoons pumpkin seeds


  1. Stuff the mini bell peppers with hummus.
  2. Mix together the trail mix.
  3. Divide all ingredients between four 3-compartment storage containers.
  4. Store in the fridge for up to 4 days.
